The hanging weight is the carcass weight of the steer, hanging on the butcher's hook.
This is what you're paying for when purchasing a share of a steer.
Upon slaughter, the steer is then de-hided and dressed.
How you choose to customize the butchering of your steer will determine how much you will yeild. Generally you will expect to get 60-64% of your hanging weight in packaged, vacuum sealed beef.
We accept cash, credit/debit cards, and electronic payments like Apple Pay and Google Wallet.
If buying a year’s worth of beef, I recommend the following based on household size:
3-5 people: ½ steer
6+ people whole steer
For a 1/2: 19-24cu ft freezer
For a whole: A large deep chest freezer
When buying a half or whole, the price is per pound, based on its hanging weight, which is the weight of the carcass hanging on the butcher's hook. Ordering bone-in options will produce a higher yield, your deposit is taken off from your final purchase price
Because each steer is unique you're only paying for the hanging weight of that steer, the weights vary. So you only pay for what you get.
If the steer is smaller, you pay less than estimated and get less beef.
If the steer is larger you pay more, and receive more beef.
